Ingredients:
1 Package Firm (or Extra firm) Tofu
1 Lime
Small Bunch of Cilantro
1 tomato
1 Jalapeno pepper
Fresh corn tortillas
vegetarian refried beans (check labels to make sure there are no added mystery ingredients- If you can't pronounce whats in it, put it back on the shelf)
Sharp Cheddar Cheese
Directions:
Marinate tofu in lime juice, cilantro, chopped tomoato, and diced jalapeno peppers (SWIMMERS LET YOUR PARENTS DEAL WITH THIS HOTHOT PEPPER, DONT CUT IT YOURSELF) let them marinate for at least 30 minutes.
Warm refried beans with a dash of olive oil in a skillet.
Warm tortialls in microwave (easiest way) or in a skillet on the stove.
Load tortillas with tofu marinate, beans, and just a dusting of sharp cheddar cheese, as Garrett says "Cheese with strong taste allows you to use a little less and still enjoy flavor."
